But today Horsham is privileged to have him as the head chef of the China Brasserie in North Street. He took up the job to help out old friend and restaurant manager Yee Wang, having catered to the stars. "I will go anywhere to help my friends," smiles Wah.

Together Yee and Wah share the same ideas about presentation and customer service â?? the China Brasserie is the kind of restaurant where if it isn't on the menu, you can ask for it and they will make it for you. It encourages you to think differently about Chinese food, to stray away from the traditional and to move into the unexpected.

"We want to try and do something special, to have something different," Yee explains. "We are not a normal Chinese restaurant." And anyone visiting the restaurant can be sure they will be in safe hands.

During Wah's career he even worked for Aroma, a respected chain of Chinese restaurants, where he would cater for up to 200 people. "All my life I have been cooking," says Wah, who left Canton Province in China for England, aged just 16.

"My family are in the food business so I started at a very early age." He has travelled through China and Vietnam extensively, on the search for inspiration for his art. These influences are clearly tangible in the delights he and his team create, using fresh produce.

The China Brasserie is based at 33-35 North Street in an atmospheric early 15th century building.
